Creation of the day

Today's creation comes from the kitchen. As part of my personal campaign to eat healthy, my eyes (and fingertips) are always searching for alternatives to carb-loaded, sugar filled food to satisfy my sweet tooth, so the dishes of the day are homemade almond milk and strawberry sauce. Almond milk is easy on the calories as well as blood sugar and is the perfect alternative for those who are lactose intolerant. Plus, I love almonds :) Unfortunately, it's not a product that you can find on UAE supermarket shelves, so I decided to make my own!
I started off by soaking the almonds for about 24 hours.

Then, I blended them together with water, vanilla extract and a pitted date for sweetness and strained the milk.

The result was a light, frothy milk with a distinct almondy taste. It's a bit too light for me though, so next time,  I shall reduce the water quantity.
The best part about this recipe is that you don't have to throw away the almond meal ( the pulp that remains after straining). You can dry it and use it as a topping for fruit, yoghurt or ice cream! Yay for zero wastage :)

The next recipe of the day is strawberry sauce; I don't really need a reason to try out anything that has strawberries in it!!! But here are some its benefits: they are chock full of antioxidants, boost immunity, are full of fiber and are totally yummilicious. All I had to do was put the ingredients - strawberries, water, oj and a cinnamon stick -  in a pot and bring it to a boil.

This process took about half an hour and turned out a delish homemade strawberry sauce. Note that it does not require any additional sweeteners! I think I'm gonna try out the same recipes with peaches :) Here's the finished product:

Happy eating!!!
